These Beach Cheesecake Pudding Cups are delicious! Celebrate the start of beach season with this adorable no bake dessert.
Ingredients
- 1 package of butter cookies about 11 ounces
- 1 8 ounce tub of cool whip, thawed
- 1 8 ounce tub of whipped cream cheese
- 1 3.4 ounce package of cheesecake pudding mix
- 2 cups whole milk
- 1/4 cup powdered sugar
- 8 honey teddy grams
- 8 peach gummy rings
- 10 drops of blue food coloring
- 8 drink umbrellas or palm trees
- large star sprinkles
Instructions
In a large bowl, whisk together the cheesecake pudding mix with milk. If the package calls for a different amount of milk, follow those instructions. Set the pudding aside but not in your refrigerator, we don’t want the pudding completely set before mixing it with other ingredients.
In a separate large bowl, combine whipped cream cheese, powdered sugar, and cool whip. Mix well until smooth and creamy.
Add the cheesecake pudding to the cream cheese mixture and blend until well combined.
Add 10 drops of blue food coloring to the mixture and stir very well. Food coloring color intensity varied depending on the brand, so you may need to add more or less food coloring to reach the desired color. Add just a few drops at a time while stirring.
In a blender or food processor, grind the cookies until they are a sandy texture.
Place a ¾ layer of cookie “sand” into the bottom of 8 cups. Next spoon in a ¾ inch layer of blue pudding. Repeat this layering twice ending with blue pudding just below the rim of the cup.
Chill the pudding cups covered in your refrigerator for 1 hour.
Using a spoon, create a half-moon shape of cookie “sand” along one side of the pudding cups to create a beach.
Place a teddy graham bear into the center of 8 peach gummy rings and place them in the blue pudding “water” in each cup. Place a star sprinkle on the cookie “sand” and place an umbrella or palm tree into the “sand” as well.
Serve Chilled and enjoy!
