An old family recipe is turned into a delicious “Strawberry Yummy Pie” with a tender and flaky Crisco crust. Strawberry Pie is ideal for celebrating Pi Day!

Unless you’ve lived under a rock this past week, you probably are aware that a most important holiday is coming up. No, I’m not talking about St Patrick’s Day, which yes…this Irish family thinks is pretty important. I’m talking about Pi Day on 3.14.

Being the good food blogger that I am, I’m joining all the other foodies out there in turning this holiday, which has nothing to do with pie and all to do with math, into a day to celebrate the most wonderful dessert of Pie. Pie is way more exciting than math, right? It’s at least more delicious anyway.

This Strawberry Yummy Pie is an adapted version of an old family recipe from Nick’s side of the family. The original strawberry pie recipe has a brown sugar/flour/pecan kind of crust and is made in a 9×13 pan. I decided to go what I think is an easier route and made this homemade pie crust recipe from Crisco, using their simple to bake with Crisco Baking Sticks. Since I love making pie now, I am happy to finally be able to celebrate and participate in Pi Day with this Strawberry Pie recipe!

Strawberry Yummy is a handed down recipe from the Doyle Family. It is typically made in a casserole dish, but I've turned it into a delicious pie!

Ingredients

  • 2 baked 9-inch pie crusts using this recipe
  • 3 eggs* or substitute egg beaters
  • 1 cup sugar
  • 2 teaspoons lemon juice
  • 1 envelope Dream Whip
  • 1 Tablespoon vanilla
  • 1/2 cup cold milk
  • 2 cups frozen strawberries
  • Additional fresh strawberries for garnish

Instructions

  • In a large mixing bowl, beat the eggs, sugar, and lemon juice on high for 15 minutes. The mixture will start to thicken (not quite as thick as pudding, but thicker than milk). Set aside.

  • In a separate mixing bowl, mix together the Dream Whip, vanilla and skim milk on high for 15 minutes, or until stiff.

  • Fold together the egg mixture and dream whip mixture. Fold in frozen strawberries.

  • Divide and place in 2, 9 inch pie plates. Cover and freeze for 8 hours or overnight.

  • Garnish with sliced strawberries and serve.

  • (Cook Time = Freeze Time)
